Easing Hubby's Woes

Rick (my dh (dear hubby, mom)) came home from work this morning feeling a little stressed out, sooooo being the good wife that I am and always trying to 'fix' things, I thought maybe if I made him something for his tummy that might help. I decided on this Pennsylvania Dutch Coffee Cake. I've heard that the smell of cinnamon is a comforting aroma. The recipe is below if you're interested:

PENNSYLVANIA DUTCH COFFEE CAKE
4 C flour 1 tsp soda
2 C sugar 1 tsp salt
2 tsp. baking powder 1/2 C brown sugar
1/2 C shortening 1/2 C butter
2 C sour milk cinnamon to taste

Sift flour, sugar, baking powder, salt and use 2 knives to cut in shortening. Remove 1/2 C of this mixture for topping. Blend sour milk and soda. Add to above mixture. Divide into three 8" pie tins. (I DID NOT DO THIS, AS YOU CAN SEE, I USED A RECTANGLE PAN). Melt 1/2 butter. Pour it on top of the 3 tins of batter. Mix 1/2 C brown sugar with the 1/2 C of batter for topping. Distribute between the 3 coffee cakes. Sprinkle with cinnamon. Bake in greased floured pans at 350 degrees for 30 minutes. This is a good recipe to use when remembering shut-ins.

PLEASE NOTE: As you can see, I didn't divide the cake into threes, I made the recipe as directed, poured it into the oblong pan, poured the melted butter over cake, sprinkled with topping and cinnamon, and baked for about 40 minutes, not 30. I would advise to check after the 30 minutes using a toothpick for doneness.

I don't know how good it is yet, but the house sure smells wonderful!!! :)
